Easy Breakfast Recipes- Give Your Day A Healthy Start

The first and most important meal of the day because after an overnight fast our body needs a punch of good nutritious food to keep us keep throughout the day. This post will help you plan your meal with super easy breakfast recipes for the next morning.

Try these amazing and easy breakfast recipes

Dish 1- Vegetable Poha

Ingredients required-

4 tbsp oil
½ cup Peanut
1 tbsp Mustard seed
½ tbsp Fennel (Saunf)
1 chopped onion
1 chopped Carrot
2 Red chilies
1 Chopped Tomato
1 tbsp Turmeric powder
2 cup Poha (Flattened rice)
1 tbsp Aamchur/Lemon juice
½ tbsp Sugar
Few curry leaves
Salt to taste

Instructions-

  1. Wash Poha with Plain water. Strain and keep aside.
  2. Take 1 tbsp oil in Kadhai.
  3. Add Peanuts and Roast it well.
    Transfer to a bowl and keep aside.
  4. In the same Kadhai, add 3 tbsp oil. Heat it up.
  5. Add Mustard seeds and Fennel. Let it splitter.
  6. Add Red chilies and Curry leaves. Cook for 10-15 Seconds
  7. Further, add Onions and cook for 5 minutes or till turn transparent.
  8. Add carrots and cook for 2 minutes.
  9. Add Tomatoes, Turmeric, Salt, and Sugar. Mix well. Cover and cook for 5 minutes.
  10. Finally, add Poha, Peanuts, and Aamchur. Mix well.
  11. Sprinkle some water, turn off the flame, and keep it covered for 5 minutes.

Tips to remember-

  • Do not soak Poha in water. Just wash it and keep covered.
    Soaking can make them Soggy.
  • If using lemon juice instead of Aamchur, add it after turning off the flame.
  • Sprinkling Water at the end will soften the Poha as we have not soaked them. Do not skip this step.

Dish 2- Sabudana Poha

Serves- 2

Ingredients required-

1 cup Sabudana
½ cup Peanuts
4 tbsp of cooking oil
1 Tomato (chopped)
2 Potatoes (boiled and chopped)
1 Green chili
1 inch Ginger (Grated)
½ tbsp Jeera/ Cumin Seeds
1 tbsp Lemon juice.
Salt and Black pepper powder to taste.
Coriander leaves for garnishing
Water for soaking Sabudana.

Instructions-

  1. Take 1 cup Sabudana in a bowl and wash it twice with normal water.
    Strain the water.
  2. Soak Sabudana for overnight.
  3. Heat a Kadhai in low flame. Add 2 tbsp cooking oil to it.
  4. Add Peanuts and roast it for 2-3 mins on medium flame.
    Turn off the flame and transfer the peanuts into a bowl. Keep aside.
  5. In the same kadhai, add 2 tbsp cooking oil.
    Add mustard seed and let it splitter.
  6. Now add finely chopped green chilies and ginger. Cook for 15-20 seconds.
  7. Now add chopped tomatoes to it, also add salt. Mix well and cook for 3 minutes or till tomatoes become a little mushy.
  8. Its time to add chopped and boiled potatoes. Cook on high flame for 2- 3 minutes.
  9. Finally, add soaked Sabudana to it. Also, add roasted peanuts to it. Mix well and cook for 3-4 minutes or till it turns a little transparent.
  10. Switch off the flame.
    Add lemon juice and Sprinkle some Black pepper powder.
  11. Garnish with coriander leaves and serve ?

Important points to remember-

  • Always wash your Sabudana twice before soaking them. It will help in avoiding stickiness.
  • Do not cover the kadhai while cooking Sabudana.
  • Always add lemon juice after switching off the flame. Otherwise, it can make your dish bitter

Dish 3- Lemon Rice

Serves – 2

Ingredients required-

2 tbsp Cooking oil
1 tbsp Mustard seeds
2 tbsp Urad dal
1 tbsp Chana dal
2 Red chilies
1 inch Ginger (Grated)
1tbspn Turmeric Powder
½ cup Peanut
2 cup of boiled rice
2 tbsp Lemon juice
Few Curry leaves
Salt to taste

Instructions-

  1. Heat 2 tbsp oil in a kadhai.
  2. Add Mustard seeds. Let it splitter.
  3. Add 2 tbsp urad dal and 1 tbsp Chana dal.
    Cook till golden.
  4. Add 2 red chilies, few curry leaves, and Ginger. Cook for 15-20 seconds.
  5. Now add Peanut and roast them well. Also, add turmeric powder.
  6. Add boiled rice and salt. Mix everything well.
  7. Turn off the flame and add Lemon juice and give it a good mix.

Ready !!!!
