When you are sad, a scoop of ice-cream can sympathize with you.
India a land of culture and custom. Wherever you go, a new mingle of spices and art makes its way to your plate. It is simply amazing to live in India and be able to taste at least once the recopies from across the nation. Well, India is also the land of festivals. Herein, different festivals have different significance. With the beauty of the decor & festivity comes delicious sweets. As the festival of Navratri 2020 and Dussehra 2020 is almost here, try these amazing and easy Home Made Sweets.
Homemade Rasmalai ♥️
Ingredients for Rasmalai-
Full fat milk- 5 cup
Lemon juice – 2 tbspn
Ice cubes – 15-20
Flour/Maida – 1 tbspn
For sugar syrup
Sugar – 1 cup
Water – 4 cup
Cardamom powder – 1 teaspoon
To make Rabri
Full fat milk – 3 cup
Sugar – half cup
Saffron strands – 4-5
Thinely sliced pistachio and almond – 2 tbspn
Instructions-
Step 1- Thickened milk for Rasmalai
- Take 3 cups of milk in a large and heavy-bottomed pan. Bring it to boil.
- Add sugar and saffron when the milk begins to boil.
- Further, reduce the flame and boil for 3-4 minutes. Keep stirring. Boil until the milk reduces to half. Keep aside to cool down.
Step 2- Make chenna
- Boil 5 cups of milk.
Switch off the flame when boiled and add lemon juice to curdle the milk.
Keep stirring. - If milk doesn’t curdle completely add a little more lemon juice and switch on the flame for 2 minutes.
The flame should be low. - After the milk gets curdled completely, switch off the flame, and add ice cubes immediately to it.
Cover and set aside for 3 minutes. - Drain out the water from it and wash it with plain water.
- Strain the rest of the water using a muslin cloth.
Hang it in the muslin cloth for about 1 hour. - After an hour take out the chenna from the muslin cloth and start kneading it to smooth.
Add 1 tbsp maida and knead until it leaves fat.
The texture should be smooth without any grain. - Make small balls out of chenna and flatten them to a disc.
Step3 – Prepare Sugar syrup
- In a large pan add 4 cups of water and 1 cup sugar. Boil until the sugar gets dissolved
- Add chenna disc to the sugar syrup. Cover and boil for 10 minutes on high flame.
- Switch off the flame and let the disc rest in sugar syrup for another 5 minutes. Keep it covered.
Step4 – Plating
- Take out the chenna disc from sugar syrup. Press them gently to squeeze out sugar syrup.
Don’t press too hard. - Keep the chenna disc on the plate or bowl. Pour warm thickened milk over it. Rest for 3-4 hours.
- Garnish with chopped nuts and Kesar strands.
Serve ?
How is it possible that we don’t mention Rasgulla when we talk about Home Made Sweets. It is one of the easiest sweets to prepare at home.
Homemade White Sponge Rasgulla ♥️
Ingredients for Rasgulla-
Full cream milk – 1.5 liters
Sugar- 1 cup
Water- 4 cups
Maida- 1 tbsp
Lemon juice- 2 tbsp
Instructions
- Boil the milk in a large and heavy bottomed vessel.
- When the milk starts boiling, add lemon juice to curdle the milk.
Stir continuously. - Keep boiling on medium to low flame till milk leaves the water completely.
- Drain out the water completely. Be careful it might be hot.
- Hang the chenna in cloth for 1 hour to remove excess water.
- After an hour starts kneading the chenna till smooth. Add flour/maida to it and knead well.
- Make small balls out of chenna. Cover and keep aside.
- In another large vessel, add sugar and water and bring to boil until the sugar dissolves completely.
- Add chenna balls one by one in the sugar syrup. Cover and boil for 10 minutes on high flame.
- Transfer the chenna balls in iced cold water immediately after taking out from boiling sugar syrup.
- When cooled completely, transfer to serving bowl and pour remaining sugar syrup.

Note
Making rasgulla at home might be tricky. But following few tips makes the whole process easier-
- 1st Tip– use only large vessel as chenna balls will doubles up in size
- 2nd Tip – Do not use low fat milk
- 3rd Tip – Knead the chenna very smoothly. Mash them between your palms for 10 minutes or until it starts leaving fat.
- 4th Tip– Squeeze out all the water from Chenna before hanging them
- 5th Tip – Always use ratio of 1:4 for sugar and water.

Pancake with Chocolate Ganache ♥️
*Ingredients for pancake-
2 cup -maida / plain flour / refined flour
2 tbsp -sugar
1 tbsp -baking powder
½ tsp -baking soda
pinch of salt
2 tbsp -butter, melted
1½ cup -milk
Ingredients for chocolate ganache-
½ cup- dark chocolate compound
½ cup- Milk
2 tbsp – cocoa powder
1 tbsp- butter
1 tbsp- sugar powdered
Ingredients for decoration-
Chocochips/ cherry/ sugar vermicelli/ sun dried fruits
Instructions- Pancakes
1. Firstly, in a large mixing bowl take 2 cups flour/maida.
2. Also, add 2 tbsp sugar, 1 tbsp baking powder, ½ tsp baking soda, and a pinch of salt.
Mix well combining all the dry ingredients well.
3. Further, add 2 tbsp melted butter, 1 cup milk, and combine well with the whisk.
4. Additionally, add ½ cup more milk and make smooth flowing consistency batter.
5. heat a nonstick pan and grease with butter. pour a ladleful of prepared pancake batter. do not spread.
6. Simmer and cook for 2 minutes or until bubbles appear on the surface.
7. Flip over the pancakes and simmer for 1-2 minutes or until cooked through.
Make all pancakes using the same method.
Instructions – chocolate ganache
- In a large bowl, take chocolate compound (small pieces) and melt it using the double boiler process.
- When the compound starts melting, add cocoa powder, sugar, and milk.
- Whisk it to smooth.
- Add butter to bring shine.
Plating-
- Arrange pancakes on a plate and spread little chocolate ganache between all the pancakes.
- Pour remaining ganache over the pancake sandwich.
- Decorate it with your favorite topping.
Chocochips/ cherry/ sundried fruits/ sugar vermicelli etc.
How about Home Made Sweets with a twist of choco and coffee?
Eggless choco coffee cake ♥️
Ingredients-
Flour/Maida- 2 cup
Powdered sugar- 1 cup
Salted Butter- 3 tbsp
Vegetable refined oil- 3 tbsp
Condensed milk- 200 ml
Cocoa powder – 4 teaspoon
Instant coffee powder- 2 teaspoon
Vanilla essence – 1 teaspoon
Baking powder- 1 teaspoon
Baking powder- half teaspoon
Milk- 1 cup
White vinegar- 1 tbspn
Chocochips- half cup
Instructions-
1.pre heat oven at 180 degree Celsius for 10 minutes.
- In a large mixing bowl-shift maida, baking powder, baking soda, cocoa powder, coffee powder mix well and keep aside.
- In another mixing bowl add powdered sugar, butter, oil, condensed milk, vanilla essence, and whisk well.
- Slowly add dry ingredients to wet ingredients into 4 small batches and mix well using cut and fold method.
- In one cup of milk add 1 tbsp white vinegar mix well and slowly add this to cake batter till smooth.
Avoid any lumps but don’t over mix.
Use only the cut and fold method. - Add choco chips to the batter and give it a mix.
- Line the cake mould with butter paper, pour the cake batter into the mould.
- Sprinkle some more choco chips. Tap the mould lightly to avoid any air bubble.
- Place the mould in the preheated oven for 25-30 mins at 180 degrees Celcius.
- After 25 minutes check the cake with the help of a toothpick. If the toothpick comes out clean your cake is ready. Take it out.
Leave it for 10-15 minutes to cool down then demould it. Further, if the toothpick doesn’t come out clean, bake the cake for more 5-8 minutes and check again.?
