This recipe for Malaysian Laksa Soup – Malaysian Coconut Curry Soup is full of amazing flavor and surprisingly simple to make. The secret to this soup is its flavorful base, Laksa paste -which you can make from scratch after reading this post.
It’s actually very simple and has no preservatives in it.
Laksa Paste is a blend of Red chillies, Cashews, Turmeric root and so many other flavourful spices.
Originally it is a nonvegetarian soup that includes dry fish, dry shrimps tossed in Laksa curry with Coconut milk, and served with rice noodles but we have recreated this amazing soup for all our vegetarian people, also keeping in mind the easy availability of ingredients in our region.

Malaysian Laksa Soup
Ingredients required-
- For Laksa Paste *
3-4 Dry Red chilies
6-7 Cashew
1 Onion
5-6 Garlic Cloves
1 fresh chilli
2 inch Ginger
1 tbsp Turmeric Powder/ 1 inch Turmeric Soup
½ tbsp Coriander seeds
- For soup base *
2 tbsp oil
Laksa Paste
1 tbsp Lemon grass/ Lemon zest
Salt and Sugar to taste
1 cup Water
1 cup Coconut milk
- For Toppings *
1 tbsp oil
1 cup Boiled Noodles
Black pepper powder
1 cup Blanched Vegetables of your choice ( Broccoli, Capsicum, Bell pepper, Mushroom etc)
Salt
1 tbsp Lemon juice
Instructions
Step 1 – Laksa Paste
- Soak Red chili and Cashew in Hot water for 15 minutes.
- In a Blending Jar add –
Red chili, Cashew, Onion, Garlic, Coriander seeds, Fresh chili, Ginger, Turmeric, little water. - Blend to make a smooth paste. Transfer in a bowl and keep aside.
STEP 2 – SOUP BASE
- In a Kadhai add 2 tbsp oil.
- Add Laksa Paste and cook for 5 minutes or till it starts leaving the pan.
- Add Water and lemongrass and bring it to boil.
- Then, add Coconut milk, salt, and Sugar and boil again.
- Turn off the flame, cover, and keep aside.
STEP 3 – TOPPINGS
- Boil Water in a Pot,
Add Vegetables of your choice. - Blanch for 2 minutes and Transfer to a bowl.
- Now take another Pan, add 1 tbsp oil and let it heat up.
- Add blanched vegetables, Sprinkle some salt and Black pepper powder to it.
- Cook for 2 minutes and Turn off the flame.
Don’t overcook it.
STEP 4 – SERVING
- Take a serving bowl and half of it with soup.
- Squeeze some lemon juice.
- Add boiled noodles.
- Top it with Prepared vegetables.
- Garnish it with few coriander or mint leaves.
